Homemade Mayonnaise

500mls Olive Oil
3 Eggs
1tsp Dijon Mustard
30mls Vinegar

Your ingredients for mayo are basic and the results are amazing. You can use the oil of your choice as well as vinegar and mustard

Separate egg yolks into blender, add mustard, vinegar.

Now slowly add the oil, not to fast as the mayo will split, you can hear the mix thicken as you go, keep adding till all oil is used, now you can add salt and pepper and a dash of water if it looks to thick, blend again.

Try adding fresh lime juice or lemon juice for a nice taste.
